Honey, Soy and Sesame Dressing/Dip

This dressing is packed full of flavour and works well with, pork, chicken, tofu and sweet potatoes. It also makes a great slaw with shredded, cabbage, carrot and spring onion.

Ingredients:

Camelina Oil - 4tbsp

Lime Juice – 1/2 of one lime

Garlic - 1 clove crushed or finely chopped

Fresh Ginger – 1 knob, roughly the same size as your garlic clove

Honey – 1 tsp

Tahini – 1 tsp

Soy Sauce – 2 tsp

Mustard – 1 tsp

Equipment:

Stick blender with cylindrical cup

Small measuring jug

Method:

  1. Combine all the ingredients except the camelina oil into your stick blender cup and give it a quick blitz with the stick blender to make a smooth(ish) paste.
  2. Poor your camelina oil into the small measuring jug
  3. Now while continually blending your paste, gradually poor your oil from the measuring jug into your cup, this will combine everything into a smooth emulsion*

Decant into a jar, cover and store in your fridge. Consume within 10 days (you will definitely have eaten it before then though).

*Gradually adding the oil while blending allows the oil, lime juice and mustard to combine into a stable emulsion. You can blend everything together and get the same flavour but the emulsion won’t be as smooth and stable as if you blend the oil in gradually.
